Having studied law and business, Punitha moved to Wales to raise her family. Her love of food and business led her to open the first South Indian specialist gourmet restaurant in Wales – Panithas in Cardiff. Hand picked chefs from various regions of South India blend authentic spices with local produce with delicious results.
Hywel has worked in a string of Michelin Star establishments throughout his career – Chez Nico at 9, Marco Pierre White, Le Souffle – earning his own as Head Chef at Foliage restaurant at the Mandarin Oriental Hyde and at Lucknam Park. His newest venture is “Calon” restaurant at Llanerch Vineyard.
Anand George was born in Kochi, Southern India, the centre of spice trade since the 14th Century. Having worked for India’s premier hotelier in Mumbai, Anand moved to London and most recently started Mint and Mustard. Their belief is that the heart of Indian cuisine lies in the villages and small towns with authentic family recipes.
Head Chef Daniel has just helped secure a 2nd AA rosette and was praised for his use of seasonal ingredients in creating innovative dishes. Daniel was previously at Llangoed Hall where they achieved a Michelin star and aims for similar at Raglans.
Born in Manchester, John Cook moved to South Wales and trained at Bridgend College before working as Sous Chef at The Coed-Y-Mwstwr. In 2001 he was a finalist in the Welsh Chef of the Year and John has been Head Chef at Oscars since opening in 2004.
After 17 years in the baking industry Ray Newberry returned to UWIC (where he trained) in 1988 to teach baking technology and has developed some of the most successful modules including the Science of Chocolate. For the Festival Ray will examine the production of hand made quality chocolates using the best Belgian chocolate.
Raised in Maesteg, Ryan Jones trained at Bridgend College and later worked at the Hyde Park Intercontinental Hotel. Inspired by fine dining experiences in London, Welsh speaker Ryan returned to Wales in 2001. His passions are classical cooking, French cuisine and Welsh produce.
Alex Beard trained with the world famous chef Raymond Blanc and worked at Le Manoir for four years. She then moved to another gourmet restaurant before setting up her own personal chef business based in Abercynon.
Born in Capri, Massimo trained in advanced pâtisserie and confectionery in London and went on to work in some of the UK’s best eateries including The Aubergine for Gordon Ramsay.
